We study model near-critical polymer gelling systems made of gluten proteins dispersions stabilized at different distances from the gel point. We impose different shear rates and follow the time evolution of the stress. For sufficiently large shear rates, an intermediate stress overshoot is measured before reaching the steady state. We evidence self-similarity of the stress overshoot as a function of the applied shear rate for samples with various distances from the gel point, which is related to the elastic energy stored by the samples, as for dense systems close to the jamming transition. In concordance with the findings for glassy and jammed systems, we also measure that the stress after flow cessation decreases as a power law with time with a characteristic relaxation time that depends on the shear rate previously imposed. These features revealed in non-linear rheology could be the signature of a mesoscopic dynamics, which would depend on the extent of gelation.
Eggs are key ingredients in our kitchens because of their nutritional values and functional properties such as foaming, emulsifying and gelling, offering a wide variety of culinary achievements. They also constitute ideal objects to illustrate a myriad of scientific concepts. In this article, we focus on several experiments (egg-speriments) that involve the singular properties of the liquids contained inside the eggshell, especially the egg white. We first characterize the rheology of an egg white in a rotational rheometer for constant and oscillatory shear stresses revealing its shear-thinnin…
Herein, we numerically study the rheology of a two-dimensional frictional granular system confined by constant pressure under oscillatory shear. Several scaling laws for the storage and loss moduli against the scaled strain amplitude have been found. The scaling laws in plastic regime for large strain amplitude can be understood by the angular distributions of the contact force. The scaling exponents are estimated by considering the physical mechanism.
Recently, we proposed a universal scaling framework that shows shear thickening in dense suspensions is governed by the crossover between two critical points: one associated with frictionless isotropic jamming and a second corresponding to frictional shear jamming. Here, we show that orthogonal perturbations to the flows, an effective method for tuning shear thickening, can also be folded into this universal scaling framework. Specifically, we show that the effect of adding in orthogonal shear perturbations (OSP) can be incorporated by simply altering the scaling variable to include a multipli…
Shearing with a finite shear rate a compressed granular system results in a region of grains flowing over a compact, static assembly. Perforce this region is dilated to a degree that depends on the shear rate, the loading pressure, gravity, various material parameters, and the preparation protocol. In spite of numerous studies of granular flows a predictive theory of the amount of dilation is still lacking. Here, we offer a scaling theory that is focused on such a prediction as a function of shear rate and the dissipative parameters of the granular assembly. The resulting scaling laws are univ…
In this letter, we discuss how flow inhomogeneity affects the self-diffusion behavior in granular flows. Whereas self-diffusion scalings have been well characterized in the past for homogeneous shearing, the effect of shear localization and nonlocality of the flow has not been studied. We therefore present measurements of self-diffusion coefficients in discrete numerical simulations of steady, inhomogeneous, and collisional shearing flows of nearly identical, frictional, and inelastic spheres. We focus on a wide range of dense solid volume fractions, that correspond to geophysical and industri…
In addition to the terminal flow (the region I) and the shear thinning (the region II), we discover two new flow regions in capillary flow at the wall stress higher than the plateau modulus of the polymer. The region III violates the empirical Cox-Merz rule with a significantly weaker shear thinning than the region II, and the region IV exhibits unexpected shear thickening. Moreover, the crossover shear rates between the regions II and III and between the regions III and IV scale with the number of entanglement per chain, Z=M_w/M_e, as Z^(-2.0) and Z^(-1.2) respectively. We attribute the weake…
Single-chain nanoparticles (SCNPs) are ultrasoft objects obtained through purely intramolecular cross-linking of single polymer chains. By means of computer simulations with implemented hydrodynamic interactions, we investigate for the first time the effect of the shear flow on the structural and dynamic properties of SCNPs in semidilute solutions. We characterize the dependence of several conformational and dynamic observables on the shear rate and the concentration, obtaining a set of power-law scaling laws. The concentration has a very different effect on the shear rate dependence of the fo…
In this paper we study the mechanical properties and pore structure in a three-dimensional molecular dynamics model of porous glass under athermal quasistatic shear. The vitreous samples are prepared by rapid thermal quench from a high temperature molten state. The pore structures form via solid-gas phase separation. The quiescent samples exhibit a wide range of pore topography, from inter-connected pore network to randomly distributed compact pores depending on the material density. We find the shear modulus strongly depends on the density and porosity. Under mechanical loading, the pore stru…
We show that the yielding transition in granular media displays second-order critical-point scaling behavior. We carry out discrete element simulations in the low inertial number limit for frictionless, purely repulsive spherical grains undergoing simple shear at fixed nondimensional shear stress $Σ$ in two and three spatial dimensions. To find a mechanically stable (MS) packing that can support the applied $Σ$, isotropically prepared states with size $L$ must undergo a total strain $γ_{\rm ms}(Σ,L)$. The number density of MS packings ($\propto γ_{\rm ms}^{-1}$) vanishes for $Σ> Σ_c \approx 0.…
Using discrete element simulations, we demonstrate that critical behavior for yielding in soft disk and sphere packings is independent of distance to isostaticity over a wide range of dimensionless pressures. Jammed states are explored via quasistatic shear at fixed pressure, and the statistics of the dimensionless shear stress $μ$ of these states obey a scaling description with diverging length scale $ξ\propto |μ-μ_c|^{-ν}$. The critical scaling functions and values of the scaling exponents are nearly independent of distance to isostaticity despite the large range of pressures studied. Our re…
A key interest in geomorphology is to predict how the shear stress $τ$ exerted by a turbulent flow of air or liquid onto an erodible sediment bed affects the transport load $M\tilde g$ (i.e., the submerged weight of transported nonsuspended sediment per unit area) and its average velocity when exceeding the sediment transport threshold $τ_t$. Most transport rate predictions in the literature are based on the scaling $M\tilde g\proptoτ-τ_t$, the physical origin of which, however, has remained controversial. Here we test the universality and study the origin of this scaling law using particle-sc…
Amorphous materials exhibit peculiar mechanical and vibrational properties, including non-affine elastic responses and excess vibrational states, i.e., the so-called boson peak. For polymer glasses, these properties are considered to be affected by the bending rigidity of the constituent polymer chains. In our recent work [Tomoshige, et al., Sci. Rep. 9 19514 (2019)], we have revealed simple relationships between the variations of vibrational properties and the global elastic properties: the response of the boson peak scales only with that of the global shear modulus. This observation suggests…
